Mortar & pestle, oralu kallu, cupstones, molcajetes... by any other name, these grinding instruments represent some of the oldest forms of human technology. At Voodoo Authentica of New Orleans, we call them "pilon", from the Haitian Kreyol word for mortar & pestle.
A pilon is used to crush, grind, and powder leaves and roots for both ceremonial and culinary purposes. While different regional materials are traditionally used to create these tools, pilon are often made from wood. Some of the oldest styles of pilon, especially in West Africa and the Carribbean, are carved from hollowed-out tree trunks. These are especially helpful for grinding large amounts of ingredients at once, and as such play a major role in the preparation of sacred powders.
